Processed Food: Good and Bad

Mukund Karwe (Food Science)

In this seminar, students will be introduced to why we process food, what is involved in bringing food from farm to fork, and the impact of processing on food. Processed foods have been receiving a bad rap for some time and are considered to be a major contributor to the obesity crisis and other chronic diseases. This seminar will examine the good and necessary side of food processing and the undesirable impacts of food processing. The main idea is to teach students to collect good information on the topic, learn to decipher between subjective and objective judgments, and to promote scientific and logical thinking. In addition to classroom discussion sessions, we will visit a variety of laboratories, local companies, and shows where students will learn about food processing and processed foods.
